All vineyard operations, including the non-traditional fine-drip irrigation system that encourages the highest quality fruit, fall under the watchful eye of leading Italian agronomist Andrea Paoletti.
Quality vs. Quantity
Green harvests help ensure that vine energy is directed to optimal ripening by reducing the grape load. This restricts the maximum yield per vine to one kilo of exceptional fruit. After careful inspection grapes are hand-harvested into small crates and undergo subsequent hand sorting twice to guarantee that only the best berries go into Tolaini wines.
